Pancakes are definitely a favorite food in my house. I try to make up a big batch on most weekends and have a stash in my freezer ready to go for easy breakfasts and snacks. I love how you can add so many different fruits and veggies into pancakes. You better bet I leave out the sugar (or replace with rice malt syrup) in all of my pancakes. I serve pancakes either dry or with fresh fruit, we use maple syrup only for special occasions (like when we were on vacation in Vermont). I also have fun experimenting with different flours like buckwheat, oat, whole wheat, and almond flour – I rarely use only whole wheat flour (and never white flour) in my pancakes.
You know what I don’t love about pancakes? How long it takes to cook up a big batch! You can usually find me with a chair pulled up to the stove (or trying to fold a load of laundry in between flipping). And you better bet I’m eating them while they are cooking – get ‘em while their hot!
