Springtime brings about action to clean out, clean up and step out of doors with more bounce in our step. This is Mother Nature’s call to mirror the bursting out of the bud that she offers. Life is in tune with the seasons. Choices to reflect our lightening up prepare us to reveal ourselves to the world in a fresh way.
Dandelion greens are a perfect food for lightening up, both plentiful and seasonal in the spring. The greens are known for being supportive for healthy liver function. A healthy liver is vital for life since it is the body’s largest detoxifying organ.
INGREDIENTS:
One bunch finely chopped dandelion greens
½ cup green onions, thinly sliced
2 cups thinly sliced Napa cabbage
1 cup broccoli sprouts
DRESSING INGREDIENTS:
3 Tbsp lemon juice or one whole lemon juiced
1 Tbsp. mirin or rice wine vinegar
1/8 tsp. sesame oil
1 tsp. apple cider vinegar
1 tsp. tamari
2 Tbsp. olive oil
¼ tsp. maple syrup
DIRECTIONS:
Thoroughly rinse vegetables in cool water. Place the prepared vegetables except sprouts in a bowl.
Whisk the dressing ingredients together.
Lightly incorporate dressing over the vegetables. Top with the sprouts.
Serve immediately.
