Grace Davis is a junior studying history at Yale University. She has worked as President and advisor to Y Pop-Up, Yale’s only student-run dining organization. An avid coffee-drinker, Grace became interested in the history of coffee a few years ago when she learned that the global insurance market Lloyd’s of London began as a coffee shop. Grace wrote this paper for a popular class at Yale called “The Mystery of Sleep,” taught by world renowned sleep scientist Meir Kryger. At Yale, Grace can often be found in the library reading and sipping on a large hot latte with regular milk. Outside of class, Grace does research for Professor Paul Freedman, food historian and medievalist. After taking “The Mystery of Sleep,” Grace has made a concerted effort to stop drinking caffeinated beverages after 4pm in pursuit of a healthier sleep schedule. In her free time, Grace loves to chat at the coffee shop with her friends, read about the history of sleep and food, and lavish affection on her two dogs.
