As a nutrition educator Kathy is presently adjunct faculty for the University of New England online graduate program in applied nutrition. She speaks extensively on sustainability, nutrition, and the power of a whole food plant-based diet to heal. She is co-founder of SustainableDiet.com which offers dietary transition support through its signature online program as well as mentoring. She serves on the board of directors of the annual Plant-based Prevention Of Disease (P-POD) conference.
Kathy spent six years as an instructor for the renowned T. Colin Campbell Center for Nutrition Studies.
